While I'm at it... thought I would give you this one as well. A few of my old girlfriends requested this quite often. Since we don't speak anymore I thought I would post this so they can fix it for themselves.
Another one of my feel good meals, I fix this for the hubby and I and we can get 3 meals out of it for us and the kiddos. Most of the time I fix 2 batches and freeze one for a later date. If you decide to freeze, don't bake. It will dry out and the noodles will get tough. Wait to bake it until after you thaw and you plan to eat that day.
Love my Lasagna
1 box (16oz) of lasagna noodles
1 lb ground beef
24 oz jar of Ragu Traditional (yes I cheat)
1 8oz can of diced tomatoes
6 cups shredded mozzarella
8 oz cream cheese
16 oz small curd cottage cheese
2 eggs
Italian seasoning
Cook Lasagna noodles al dente.
Brown ground beef add sauce and drained tomatoes, let simmer while noodles are cooking.Beat 2 eggs and mix with cottage cheese. Spread a thin layer of sauce on bottom of pan to prevent sticking. Layer noodles, sauce, cottage cheese, small pinches of cream cheese and shredded mozzarella. You should be able to make 3 layers in a 9 x 13 pan. Last layer leave out cottage and cream cheese. Sprinkle Italian seasoning lightly. Bake at 350 for 30 minutes. Let Lasagna rest for atl east 10 minutes before you slice.

Miss Rosie's Chicken Spaghetti
My sister recently requested the recipe for my Chicken Spaghetti... thought I would share it for the rest of you as well. One of my favorite feel-good dishes to serve.
1 lb bowtie pasta, cooked al dente
1 can mild Rotel Tomatoes ( I use mild)
1 can cream of chicken soup
8 oz sour cream
16oz box of Velveeta
4 large chicken breast, diced into 1 inch pieces
1 small yellow onion, diced
1 tbsp chili powder
1 tbsp garlic powder
1 ½ cup shredded sharp cheddar
2 to 3 tbsp of Butter (yummy)
Saute onions and seasoning in butter till transparent, add chicken and brown. Set aside in 9 X 13 casserole dish. Drain pasta and pour into pan.
In a medium saucepan on medium to low heat add Rotel Tomatoes, cream of chicken soup and Velveeta and melt together. Add sour cream and pour over pasta and chicken. Sprinkle shredded cheddar over and bake at 350 uncovered, until cheese is melted to your desire.

Hot Diggity Dog
as I have noted before, I swore I would never eat a gas station hot dog... NEVER.
It was almost as if the angels had started singing and the lights shined down from heaven on the roller grill. I couldn't help myself, it looked so yummy and moist unlike the usual dried out and brown hot dogs. I just had to have one. So, I did it. I came back to work, sat down in my usual lunch place to enjoy this little gift from heaven and I promise it had to be the best hot dog I had ever eaten, seriously.
As of right now I don't regret my decision to eat the hot dog. I honsetly love hot dogs, but I had always had this enormous fear of eating gas station food other than the regular deli choices like chicken tenders or a Subway. I stepped out of my comfort zone and went for it.
Today as I ventured out on my lunch break I did the usual tanning bed to get rid of the white pasty look of my fat roll (cellulite looks better tan) and then I though hard about making a trip to WalMart to return a pair of jeans and a knock off tervis tumbler and realized that I needed to fill up the tank of the monster truck. I fill her up $60 bucks worth go inside to get a fountain drink and a pack of smokes and there they were... roller grill hot dogs.

Baby its cold outside!
I'm not a big holiday person, so to say, but I try. Many years ago my family had a devastating Christmas with the loss of an amazing woman, on top of all that we had a just a little family drama. I won't get into details because its nobodys business but in all it wasn't good for the holiday spirit. At all...
Since then I have felt like the holidays were tainted for me. I never get excited about putting up the tree, putting out decorations, making cookies or any of that stuff. Having a 5 yr old and a 2 year old, I've got to get past that some day. I have tried really hard since we had kids to get excited but it seems like it gets worse every year. The thing that I can't get past is my attitude. I am so bitter this time of year. No matter what I try to do to get in the spirit, I just can't get over it. I try to have a positive outlook, but its to the point that I can't get ahead no matter what I do.
We have tried to make a family tradition of champagne and Christmas music while we put up the tree... I usually end up drunk and raising hell because the Husband hands me the ornaments too fast... gotta have time to place them, or he won't get up and help hang ornaments (usually because I bitch because he did it wrong). Don't blame me, its the alcohol. That right there makes it even more fun... yippee! Then the next few days is filled with me raising more hell because 1. I just got over a killer hangover, 2. the kids won't keep their hands out of the tree 3. I, for some reason, try to rationalize with myself that I need more Christmas decorations in the house. Why? I'm not really sure, maybe it will make me like the commercial part of the holiday more, I don't know. Never the less... I end up sending us bankrupt since we are already broke at the Dollar General buying pointless little knick knacs that could otherwise be viewed as JUNK. Yep.
The next part is even better... that couple of hundred bucks I spent on kid 1 and kid 2... tossed aside for the wrapping paper and then off to the grandparents to see what else they can get their hands on. It just really chaps my you know whatta that all she wanted last year was a video game, so we got it, and right now I think it's under her bed... seriously. But alas Santa dearest will come through this year yet again and get that top pick on her list. This year Baby Alive, the one that eats. Wonder how long she will play with that one. I'm kinda excited to see what it really eats. Plastic maybe?
Who cares anyway right? Christmas is not about exchanging gifts and seeing who paid more that who for what. Its about the BIRTH OF JESUS! I don't understand how we ended up with a Santa... oh yea it was Woolsworth wasn't it. I would rather people show this much joy and happiness all year long. My sister says ... and I quote:
Uhmmmm Santa is actually a commercialized version of Saint Nicholas that visited poor children and brought them gifts during the Advent season (the 4 weeks before Christmas). So, there is actually a reason for Santa… a historical reason. Just thought you might get a kick out of that.
